MAPLE MAGIC: SAVORY AND SWEET COOKING WITH WOOD-FIRED SYRUP

Everyone knows how to doctor up pancakes, waffles, and ice cream with Vermont’s finest, but in this class, we’ll push the envelope, and make a three-course meal that includes maple in lots of creative ways.
We’ll begin with a salad featuring a mix of lettuce and bitter greens, complemented by maple-coated nuts, dried cranberries, and a maple-cider-browned-butter dressing.
Our main course will be chicken chowder, but in a twist, the base of the soup will be maple sap from teacher Suzanne Podhaizer’s sugarbush. On the side, we’ll have rye & cornmeal muffins with smoky maple-goat cheese spread.
Dessert will be malted maple pudding.
Class includes instruction time, cooking, and sitting down for a meal with your classmates. As we cook, we’ll be focused on problem solving and technique building, rather than following recipes. Questions encouraged. Bring an apron, if you’d like.
Many dietary restrictions can be accommodated. The majority of our ingredients – most importantly, all of the animal products – will be sourced from local farms. Maple is from Haven Hearth & Homestead in St. Johnsbury.
Instructor: Suzanne Podhaizer
Suzanne Podhaizer is a chef, farmer, and award-winning journalist with a passion for creative, ethical cooking (and eating). She and her partner, Jack, have a homestead in St. Johnsbury. There, they sugar, forage, and grow food plants and mushrooms. Suzanne is entranced by cheese, edible flowers, wild foods, books, board games, and photography. If she could teach everybody one cooking technique, it would be braising. She also loves dreaming up themed menus, especially when they’re based on literature, film, or moments from history.
